Wholesome Veggie Chili

Ingredients:

  • Yellow Onion (1)

  • Garlic (3 cloves)

  • Bell Pepper (1 yellow, 1 green)

  • Kidney Beans (1 can)

  • Chickpeas (1 can)

  • Black Beans (1 can)

  • Diced Tomatoes (1 can)

  • Cumin (2 tbs)

  • Chili Powder (1 tbs)

  • Cinnamon (dash)

  • Salt (pinch)

  • Pepper (pinch)

  • Bay Leaf (1 leaf)

Method:

Everyone has a chili recipe. This one is mine. And I have to say, it’s one of the best because it becomes a delicious flavorful vegetarian stand alone meal OR a base that you can build on. For instance, you can add cubed sweet potato, butternut squash or quinoa. Or if creating a meat version, you’d add browned ground turkey meat. BUT lets stick to my fave version of this which is vegetarian and perfect. 

Like most of my recipes, feel free to play with quantities for your preference but here’s what I would do. Especially because even if I’m just making this for one or two people, I make a large amount and freeze it! You won’t regret it. 

Dice a yellow onion. Begin to saute in a dutch oven with a little olive oil. Then add three cloves of minced garlic. Pinch of salt and saute until tender. Then add diced yellow and green bell pepper. You can use any color you like but as it’s a rather red dish, I like to spice it up with a little green and yellow pepper. Also add in a little hit of jalapeno if you like that spice. If not, please know, it doesn’t need it. You can also add jalapeno at the end as a little topper. You do you!

Add two tablespoons of cumin, one of chili powder, salt, pepper and cinnamon. Stir and make sure all those flavors are coating the veggies. This part may sound controversial, but I feel like for this meal you can either drain and rinse the beans or not. I usually drain and rinse them and then fill up the can halfway with water, give a swish and dump in with the beans as well. Stir. Make sure everything is getting on everything. Add a can of diced tomatoes and one bay leaf. Then let it simmer and do it’s thing. Make sure to remove the bay leaf when you’re serving. 

Here’s how I would serve it - In a bowl, add chili. Then crunch a bunch of tortilla chips, sliced avocado or guac, cilantro, cheese and a squeeze of lime.

I promise you, it’s the most delicious meal and you will NOT miss the meat.
