The Easiest Parchment Paper Fish You’ll EVER Make

So here’s what I know… people don’t like cooking fish in their homes because they’re often nervous. Whether that be about the smell or about undercooking or overcooking or because one might have the very rare Ichthyophobia - the extreme and overwhelming fear of fish. Here’s a recipe that I encourage you to make but honestly, you can’t really mess it up. AND it’s delicious and makes you and your guests think you’re an absolute pro at cooking fish. Also once you get the technique you can do all sorts of things with this recipe.

Here’s what you’ll need:

  • fish of choice but for this moment I’m saying a thick white fish like cod. We’re going with cod for this specific recipe - 6-8oz per person

  • herbs like parsley, basil, dill and oregano

  • cheery tomatoes - I’d say about 6 tomatoes per person

  • one lemon per two people

  • kalamata olives - however many you like per but I’d say like 5, pitted and sliced in half

  • olive oil

  • salt and pepper

You’ll also need - parchment paper - a 13-inch square per person , baking sheet

You might also want to make the crispy smashed potatoes to go along with this goodness!

Lets Cook:

Preheat your oven to 400°. While that’s heating up, you’re going to prep everything that will be going into your beautiful little packet for each person. Begin by cleaning your herbs and removing the stems, slice your lemons into half inch slices, cut the olives long ways and cut the tomatoes in half. Pat the fish dry and place in the center of the parchment paper square. Salt and pepper the fish. Then place the slices of the lemon top of the fish. Add the tomatoes, herbs, olives and a drizzle of olive oil over everything. Now for the arts and crafts part. Take two sides of the paper and begin to roll them so that you’re creating a pocket. when you get the ends, make sure you tuck it in under the fish. You’re trying to create an airtight pocket that allows the fish to steam. Then place each pocket on the baking sheet and bake at 400° for 14-16 mins. When serving, each person gets their own little pouch of goodness. Carefully open with your knife as there will be steam. ENJOY! Let me know what you think!
